Pepper Jack Shrimp Cocktails

Pepper Jack Shrimp Cocktails

Yield: 6 servings

Ingredients

  • 1 pound (26-30 count) frozen shrimp, cooked and deveined
  • 1/2 pound Wisconsin Pepper Jack cheese
  • 1 bunch kale, rinsed
  • 1/2 cup prepared cocktail sauce
  • 1 lemon, cut into wedges
  • Toothpicks, frilled or fancy

Instructions

  1. Thaw shrimp under cold running water. Cut Wisconsin Pepper Jack cheese into 1/2 inch square cubes.
  2. Line a serving platter with kale. Pour cocktail sauce in a serving dish and place in center of kale-lined platter.
  3. Place a cube of Wisconsin Pepper Jack cheese in the center of each shrimp where the natural curve occurs. With a wooden pick, skewer the shrimp, first through the tail, then through cheese cube, then into the shrimp again. Place each on the platter. Continue until all shrimp are skewered. Arrange lemon wedges on platter to garnish.
  4. Chill shrimp platter about 1/2 hour before serving.
