Skordalia (Greek)
4 thick slices bread, soaked in water
1 1/2 cups mashed cooked potatoes
3 cloves garlic
1/2 cup walnuts
3/4 cup olive oil
1/3 cup fresh lemon juice
1/2 teaspoon salt
Squeeze bread to remove excess water. Place bread, potatoes, garlic and walnuts
in food processor. Whirl until smooth and creamy. With machine running, add
oil in slow, steady stream through feed tube until thoroughly incorporated.
Blend in lemon juice and salt.
Serve in bowl with vegetables or triangles of pita bread for dipping.
