Does anyone have the recipe for strawberry jam made from figs? Many years
ago this recipe was given to me by a lady named Adams from Minnesota, but
it was lost when I was in a flood. I remember that you had to put
strawberry jello in this but cannot remember the rest. All help

I've been searching the web looking for Spumoni Cheesecake. This
particular version is three creamy layers of cream cheese, not ice cream.
One layer is cherry, one is green and not sure about the third layer. My
husband and I tasted this fabulous treat at LaMinestra Restaurant in Pierre,
South Dakota. Everyone should taste this cheesecake at least once in their
life! Please help me, I need to make this for my friends and family ...

This is for the Laura Reed, asking about getting rid of gnats. They are
finding something sweet, fruit, juice, sugar...even if you clean well,
they will find the smallest piece. If you put a jar lid or small shallow
dish of vinegar near where you find them they will be attracted to it. You
will need to change this daily until the problem is gone. You will also

This is for Lauri Reed. I use a mixture of vinegar, sugar, and water to
get rid of gnats in the kitchen. During the summer I have a lot of
vegetables laying on the cabinet or table getting ready to can...so the
gnats show up. I had read this in an organic magazine and it does work.
What you do is mix some vinegar and sugar till the sugar is dissolved then
add some water. You do not want to add a lot of water. What you want is a
strong vinegar smell. You put some this mixture in a quart jar...filling
it till it is about 1/3 full and sit it around where the gnats are at. They
will fly into the jar and land on the surface of the mixture and then can't
get back out. When the mixture has evaporated or a lot of bugs are in it,
wash out the jar and add some fresh liquid. I set this mixture in jars in
my apple and peach trees when they first start blooming. I keep it in the
trees till the fruit is all gone. I have very few bugs in my apples and
peaches when I go to canning them. Hope this will help you. Polebender

Shannon requested help to remove grease from fabric: If that is an oil
stain like from gravy before washing, she can sprinkle with either flour,
talcum powder or corn starch. Let it stay there a bit (maybe 1/2 hour) as
it will absorb the grease. Then brush off. If needed reapply and let sit
again.

If it is black grease stain from a car, I don't know. ~ Diane

Shannon wanted to know how to get the grease out of the clothes, here is
what I use and it works every time, Buy a bottle of Lestoil. It is found in
the cleaning aisle at the grocery store. Pretreat stain before washing! Put
Lestoil on dry clothing, on the stain and rub in real good and let sit
before washing about 20 minutes! Wash the clothing separately, where as
Lestoil has a strong smell! All grease stains should come out, if not
repeat again and check it before putting item of clothing in the dryer!

Molten Mocha Cakes

Total Time: 32 minutes
Makes: 8 servings

1 package (8 squares) BAKER'S Semi-Sweet Baking Chocolate
1 cup (2 sticks) butter
2 cups powdered sugar
1/2 cup GENERAL FOODS INTERNATIONAL COFFEES, any flavor
5 whole eggs
4 egg yolks
3/4 cup flour

Heat oven to 425 degrees F. Grease 8 (6 ounce) custard cups or souffle
dishes. Place on baking sheet.

Microwave chocolate and butter in large microwavable bowl on HIGH 2 minutes
or until butter is melted. Stir with wire whisk until chocolate is
completely melted. Add powdered sugar and flavored instant coffee; mix well.
Add whole eggs and egg yolks; stir until well blended. Stir in flour. Pour
batter evenly into prepared custard cups. Bake 15 to 16 minutes or until
cakes are firm around edges but soft in the centers. Let stand 1 minute.
Run small knife around cakes to loosen. Carefully invert cakes onto dessert
dishes. Garnish with a light sprinkling of additional powdered sugar and
fresh raspberries, if desired. Serve immediately.

Hot Fudge Sundae Cake

A warm, delicious way to enjoy a hot fudge sundae! Go ahead and add ice
cream for a homemade parlor treat.

1 cup Gold Medal all-purpose flour
3/4 cup granulated sugar
2 tablespoons baking cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla
1 cup chopped nuts, if desired
1 cup packed brown sugar
1/4 cup baking cocoa
1 3/4 cups very hot water
Ice cream, if desired

Heat oven to 350 degrees F.

Mix flour, granulated sugar, 2 tablespoons cocoa, the baking powder and
salt in ungreased 9-inch square pan. Mix in milk, oil and vanilla extract
with fork until smooth. Stir in nuts. Spread in pan.

Sprinkle brown sugar and 1/4 cup cocoa over batter. Pour water over batter.

Bake about 40 minutes or until top is dry.

Spoon warm cake into dessert dishes. Top with ice cream. Spoon sauce from
pan onto each serving.

Creamsicle Cookies

1 1/2 cups packed brown sugar
3/4 cup shortening
2 eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1 cup white chocolate chips
3 tablespoons orange-flavored drink mix (e.g. Tang)
1 teaspoon baking soda
1 1/2 teaspoons baking powder
3 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon butter
3 tablespoons orange-flavored drink mix (e.g. Tang)
1 cup confectioners sugar
3 tablespoons water

Heat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.

Cream the shortening and the sugar together until light. Add the eggs and
vanilla extract, mixing well.

Dissolve the baking soda in the buttermilk. Add the buttermilk mixture,
salt, 3 tablespoons Tang, flour and baking powder to the shortening mixture.
Mix well. Stir in the white chocolate chips. Drop dough by teaspoonsful
onto the prepared sheets. Bake at 375 degrees F (190 degrees C) for 10 to
12 minutes. Frost cookies while still hot with Tang Glaze.

To Make Tang Glaze: Combine the butter, 3 tablespoons Tang, confectioners
sugar plus enough water or milk to reach a thick yet still pourable
consistency and beat until smooth.

Makes 4 dozen.

I have found that most manufacturers of stainless steel pots and pans
recommend using a product called Bar Keepers Friend or Zuds. Bar Keepers
Friend Comes in a can like Comet....Has a gold label with red lettering and
can usually be found in most supermarkets or Wal-Mart or Kmart. I wet my
pans that has stains, let them sit for a few minutes after sprinkling Bar
Keepers Friend on the problem area, and then scrub with a sponge or wet
cloth. Has worked wonders on removing stains - all types of them -from my
stainless steel pots and pans! Product is also great for removing metal
marks from my kitchen sink and off my china, stoneware, and porcelain
plates! Has also worked extremely well on removing stains from my ceramic
counter tops and off the top of my gas range! ~ Laurie in California.

Easy Breakfast Loaf

Do this once a week before your week starts. Adjust volume accordingly
depending on the number of people in your household.

1. In large bowl, mix dozen eggs.

2. Mix in one full roll of cooked sausage (like Jimmy Dean). I just pan fry
this making sure to scramble it into tiny pieces and drain oil before
adding it to the raw eggs.

3. Crumbled bacon. To save money, I used the pre-made packs of real bacon
bits.

Mix everything together and pour into pre-greased loaf pans. Bake at 350
degrees F for around 30 minutes or until inside is done.

Let it cool and slice. Put the slices in zip lock bags for easy reheating
and disposal. This lasts for at least a week in the fridge. Microwave for
45 seconds to 1 minute. 2 loaf pans (12 eggs recipe amount above) will give
you about 10 slices, or breakfast for two 5 days of the week.

Perfect breakfast bowl replacement.

Hot Apple Pie Sandwiches

1 (12 ounce) package STOUFFER'S frozen Harvest Apples, defrosted
1/2 teaspoons ground cinnamon
8 slices white bread, lightly toasted
4 slices Cheddar or American cheese, each cut into 4 strips
2 tablespoons butter or margarine, melted

Combine apples and cinnamon in small bowl. Place cheese strips on outside
perimeter of 4 slices of bread. Spoon apple mixture evenly into centers of
each. Top with remaining slices of bread; press down slightly. Brush
sandwiches with butter. Broil on each side until golden brown and cheese is
melted

Yield: 4 servings

Easy Toffee

1 stick margarine
1/2 cup packed brown sugar
1 package (sleeve) saltine crackers
1 package chocolate chips

Melt margarine with brown sugar. Let boil (not too high) for 3 minutes.
Place crackers (right next to each other) on aluminum foil-covered sheet
pan. Pour margarine with brown sugar over crackers (I used a brush and
brushed it on them). Place in 360 degree F oven for 5 minutes. Take out of
oven and immediately pour chocolate chips over crackers. Wait a few minutes
and spread melted chocolate chips to cover crackers. You can put some
walnuts or almonds on top also. Place in refrigerator for at least 1 hour.

Break into pieces and enjoy. I keep mine in the refrigerator so the choc
doesn't melt all over the place.

Crawfish Cornbread

This was listed by Forbes Magazine editors as one of the best recipes of
2004.

2 eggs
10 ounces cornmeal
11 ounces flour
1 ounce baking powder
1 teaspoon Creole seasoning (recipe below)
18 ounces milk
6 ounces melted butter
1 ounce corn syrup
1 pound crawfish tail meat

Mix the eggs, cornmeal, baking powder, Creole seasoning, milk, butter, corn
syrup and crawfish tails in a large bowl. Pour into a baking dish or iron
skillet and bake at 375 degrees F for about 40 minutes.

Place 1/2 stick butter on top; allow to melt for the golden color.

Creole Seasoning Mix:
1 pound salt
4 ounces dry, minced or chopped garlic
4 ounces ground black pepper
2 ounces cayenne pepper
3 ounces dry, minced or chopped onion
5 ounces paprika
1 1/2 ounces thyme
4 ounces oregano

Mix all ingredients and store in an airtight container.

Australian Sticky Date Pudding

A friend in Australia sent me this. I haven't tried it yet; but, it sure
sounds good.

This Australian recipe, a very moist cake, not what we'd call a pudding,
has taken Down Under by storm. You'll find it on restaurant and dinner
party menus across that country. This version was printed recently by the
New York times.

1/2 cup butter, room temperature cut into eight
pieces, plus extra to butter pan
1 1/4 cups chopped pitted dates
1 teaspoon baking soda
1/4 cup granulated sugar
2 eggs
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 3/4 teaspoons baking powder

Caramel Sauce:
1/2 cup butter
1/4 cup whipping cream
1/2 cup brown sugar (plus 1 tablespoon)
1/2 teaspoon vanilla extract

To prepare cake: Heat oven to 350 degrees F. Butter a 9-inch round
baking pan with sides at least 2 inches high, such as a springform pan.

Place the dates in a saucepan and cover with water (about 1 1/2 cups).
Bring to a boil, reduce to simmer and cook for 3 minutes. Add the baking
soda (the mixture will foam) and set aside.

In a bowl, cream the cut-up butter, sugar and eggs, adding the eggs one at
a time. Gently mix in the flour, salt and vanilla extract. Slowly stir in
the baking powder and 1/4 cup of the liquid from cooking the dates, until
the cake mixture resembles thick pancake batter. Drain off remainder of
date cooking liquid and discard. Stir in the dates. Bake for 30 to 40
minutes, or until cooked in the center.

To prepare caramel sauce: Combine the butter, whipping cream, brown sugar
and vanilla extract. Bring to a boil; reduce to simmer, and cook for 3
minutes.

To serve: Drizzle some of the sauce over the cake as it is cooling. Serve
the rest of the sauce separately.

Homemade Fruit Bars

1 (18.25 ounce) box yellow cake mix
2 1/2 cups quick-cooking oatmeal
1 1/2 sticks (3/4 cup) butter or margarine, melted
1 cup (12 ounce jar) strawberry preserves
1 tablespoon water

Heat oven to 375 degrees F. Grease 13 x 9-inch cake baking pan.

Combine dry cake mix and oats in a large bowl; add melted butter and stir
until crumbly. Measure half of crumb mixture into pan. Press firmly to
cover bottom of pan.

Combine preserves and water; stir until blended. Spread over crumb mixture
in pan. Sprinkle remaining crumb mixture over preserves; pat firmly to make
top even. Bake for 18 to 23 minutes or until top is very light brown. Cool
in pan; cut into bars.

Store in an airtight container.

Makes 4 dozen bars.

Tamale and Frito Pie (for two)

I use chili with beans.

1 (16 ounce) can chili or about 3 cups homemade chili
2 cups regular size Fritos
6 tamales, removed from the corn husks (see note)
4 ounces Monterey jack cheese with jalapeno peppers, shredded

Heat the oven to 350 degrees F. Spray a 7 x 11-inch baking dish with
nonstick spray.

Heat the chili in a saucepan until it just comes to a boil. Remove from the
heat.

Crumble the Fritos and spread in the bottom of the baking dish. Lay the
tamales on top of the Fritos. Cover with the hot chili. Bake uncovered 20
minutes. Sprinkle with the shredded cheese and bake 5 to 10 minutes more,
until the cheese melts and the mixture is bubbly. Yields 2 servings.

The recipe may be doubled.

NOTE: Canned tamales may be used if nothing else is available, although the
results will be different. If frozen tamales in the shuck are used, thaw
them before using.

White Wine/Lemon Gravy for Chicken or Seafood

1 tablespoon olive oil
1/2 cup diced onion
1 clove garlic, minced
2 tablespoons cornstarch
1/4 cup lemon juice
1/4 cup fruit punch or other juice
1/2 cup white wine (most any will do)
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
2/3 cup vegetable broth

Heat oil in a medium saucepan, add onion and garlic (if using dried garlic,
add it with the liquids). Add black pepper and cumin and saute over medium
heat.

Mix cornstarch and lemon juice until there are no lumps, then add
fruit juice. Once onions become transparent add cornstarch-juice mixture,
broth, and wine. Increase heat to bring contents to a boil while stirring.

Easiest Ever Parmesan Salad Dressing

1/4 cup salad oil
1 clove garlic, minced
1 tablespoon fresh lemon juice
2 tablespoons Parmesan cheese (kind in green
    container or whatever is available)
Dash of dry mustard
Salt and pepper to taste

Mix above ingredients in bottom of salad bowl. Add greens but DO NOT TOSS
at this time as greens will wilt. Toss when ready to serve. Delicious!

Serves 6-8.

Mom's Meatloaf

2 pounds ground beef
2 eggs, well beaten
5 slices bread, cubed or torn into small pieces
1 onion, chopped fine
1 can cream of mushroom soup, undiluted

Mix ground beef, onion, eggs, and bread cubes together with half of the can
of cream of mushroom soup. Place into a loaf pan and pour the remaining
soup over the top of the meatloaf and spread to edges. Bake at 325 degrees F
for 1 1/2 hours or till meat is no longer pink.

Serves 4-6.

Weight Watcher Muffins

3 cups all bran (the little stick kind)
2 1/2 cups water
1 1/4 teaspoons baking soda
1 package Betty Crocker low fat brownie mix

Soak bran in water, then add baking soda and brownie mix. Mix well. Bake at
350 degrees F for 20 minutes.

The BEST PART! Only ONE WW point per muffin.

Night Before Casserole

2 cups macaroni, cooked
2 cups chicken, turkey, or tuna (if using chicken
or turkey, it should be cooked)
2 cans mushroom soup
1/2 pound American cheese cut in fine pieces
3 eggs hard cooked and cut into small pieces
2 cups milk
Chopped pimento and green pepper to taste

Mix all ingredients together and refrigerate overnight or for at least 6-12
hours. Remove from refrigerator. Bake for 1 hour in a 350 degree F oven.

Comment from Mava: I make this with cream cheese instead of American. I mix
the milk, soup, and cheese in a pan and heat it until the cheese melts.
VERY TASTY!

Best Cooked Southern Cabbage

This is the true southern way to cook cabbage; my husband and family all
want to know why mine tastes better; here it is:

Use high sided, cast iron (only), skillet or Dutch oven; melt about 2
tablespoons bacon drippings in pan over medium heat. Cut cabbage into thin,
long strips. Put into pan, sprinkling some salt onto several layers; add
more bacon drippings at top layer, cover, simmer, stirring from bottom on a
regular basis. Do not add water or other liquid, as the cabbage creates
much liquid on its own.

I add cut link sausage to this while cooking and make a meal, served with
baked corn bread.

I need to know how to take care of peace lilies.

A. Spathiphyllums [Peace lilies] come in many varieties, from small
delicate leafed plants to ones with giant elongated leaves. They can all
produce white blooms. Do not let the foliage droop severely between
watering on a consistent basis. Once these plants droop and then are
watered, they stand back up, but because of the strain on the plant a few
of the lower leaves will turn yellow and must be removed. This is due to
root system damage, and as a result you will have to keep the soil moister.
Try watering a peace lily thoroughly and then let the soil at the top dry
out to the touch 2" deep. If no flowers appear, give plant less light. They
are commonly used in homes, offices and shopping malls because they are so
easy to grow and will adapt to a wide variety of conditions. They are also
one of the few low light plants to bloom reliably. Remove dead and
discolored leaves. Cut or pull off dead flowers. Trim edges of the leaves
as needed to the shape of the leaf.

In your bamboo section you talk about mainly the outdoor type of bamboo.
What type of potting soil, etc., would you recommend for planting a bamboo
plant in the house? I also have the plant in the marble filled vase and
would like to plant it as it has 3-4" roots now.

A. Bamboos are really no different from the more �usual� houseplants, and
require the same amenities: well-drained and nutrient-rich soil, sufficient
light, adequate humidity and fertilizer during the growing season. True
bamboos cannot grow in standing water; also they are grasses, and grasses
love to eat. As flowering is rare and sometimes detrimental (consuming the
plant�s vigor) in bamboos, it is best to feed with a high-nitrogen, low
potash fertilizer, i.e., water-soluble 30-10-10, although really most any
balanced N-P-K fertilizer or slow-release fertilizers like Osmocote 28-14-
14 which can be mixed into the soil for a complete feeding as per
manufacturers directions. Remove unwanted, withered culms by cutting off at
soil level. Control the height of any culm by cutting just above the node (
the place on the stem just above a branch). If the bamboo is stretching
beyond what your home ceiling allows, it will not suffer at all from being
�topped.� Simply cut the culm just above the topmost branch. Use a
container large enough to have a space at least 2" between the edge of the
root ball and the side of the container. Squatty tub-like containers are
generally better than tall ones. Keeping bamboo happy with the higher the
air temperature, the brighter the light must be for successful indoor
culture. This applies mostly to the temperate bamboos in the winter, which
like a rest. Since the light intensity is low in the winter, they prefer
cooler temperatures. Coolness seems to offset low humidity. To increase
humidity, place containers on a bed of pebbles with a little water under
them.

Cowboy Casserole

1 onion, chopped
1 1/2 pounds ground chuck, browned and drained
6 medium potatoes, sliced
1 can red beans
1 can tomatoes mixed with 2 tablespoons flour or
1 can tomato soup
Salt, pepper and garlic to taste

Put chopped onion in the bottom of the crockpot; layer with browned ground
beef, sliced potatoes and beans. Spread tomatoes or soup over all. Sprinkle
with seasonings as desired. Cover and cook on LOW for 7 to 9 hours.

Serves 4 to 6 people.

Asian Beef and Noodles

1 1/2 pounds ground beef
2 (3 ounce) packages Oriental flavor instant ramen noodles
2 cups frozen mixed vegetables
1/4 teaspoon ground ginger
2 tablespoons thinly sliced green onion

In large nonstick skillet, brown ground beef over medium heat 10 to 12
minutes or until beef is no longer pink, breaking up into 3/4-inch pieces.
Remove with slotted spoon; pour off drippings. Season beef with one
seasoning packet from noodles; set aside.

In same skillet, combine 2 cups water, vegetables, noodles (broken up),
ginger and remaining seasoning packet. Bring to a boil; reduce heat. Cover;
simmer 3 minutes or until noodles are tender, stirring occasionally. Return
beef to skillet; stir in green onion.

Makes 4 servings.

Six-Layer Sausage Casserole

1 pound pork sausage
1 1/2 cups sliced raw potatoes
1 cup sliced raw onions
1 cup sliced raw carrots
1/2 cup uncooked rice
1 1/2 cups canned tomatoes
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons granulated sugar

Partially cook sausage; drain.

Into a 2-quart casserole put a layer of potatoes, onion, carrots, sausage,
rice and tomatoes (with juice).

Combine salt, pepper and sugar, and sprinkle over top. Cover casserole, and
bake at 350 degrees F for 1 1/2 to 2 hours.

Makes 6 servings.

Mandarin Stuffed Pork Chops

4 double-rib pork chops with pockets
1 (10 ounce) can mandarin oranges
1 cu dry seasoned stuffing
1/3 cup chopped onion
1/4 cup seedless raisins
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 to 1/2 cup orange juice

Open pork chops and pound one side at a time until thin.

Drain oranges, reserving juice. Mix oranges, stuffing, onion, raisins, salt
and pepper, reserving some orange sections for garnish. Add 1/4 cup orange
juice and mix. Stuff chops and fasten with wooden picks. Place chops in a
shallow pan and add reserved mandarin orange juice.

Bake, covered, at 350 degrees F for 1 1/2 hours.

Uncover and continue to bake, basting frequently, for 20 to 25 minutes, or
until chops are golden.

Garnish with some orange sections.

Yield: 4 servings

Caldo Verde (Green Soup - Portuguese)

2 pounds potatoes, peeled and sliced
1 1/2 cups sliced green onions
1 bunch parsley
2 1/2 teaspoons salt
1/2 teaspoon white pepper
2 1/2 quarts water
4 tablespoons olive oil
2 pounds kale, finely shredded

Combine the potatoes, green onions, parsley, salt, pepper and water in a
saucepan. Bring to a boil and cook over medium heat 30 minutes.

Put the mixture through a sieve and return to the pan. Add the oil and kale.
Bring to a boil and cook 5 minutes. Serve very hot.

Serves 8 to 10.

Jell-O Smoothie

8 ounces prepared Jell-O (any flavor)
8 ounces milk
8 ounces sherbet (flavor to match Jell-O flavor)

Mix in a blender. Top with whipped cream and colored sugar, if desired.

Serves 2.
