Beer Cornbread

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup canned corn kernels, drained (or thawed if frozen)
  • 2 tablespoons scallions, chopped
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 cup beer
  • 1 tablespoon butter, melted
  • 1/2 cup Cheddar cheese, grated
  • 1 egg, beaten

Instructions

  1. Heat oven to 425 degrees F. Spray an 8 inch square baking pan with cooking spray.
  2. In a medium mixing bowl, mix together cornmeal, flour, salt, corn kernels, scallions, sugar and baking powder.
  3. Stir in milk, beer, melted butter, cheese and egg. Mix until combined.
  4. Place in oven and bake for 20 minutes.
