Mexican Cornbread

Selected by judges and 4H leaders to be shared because of appearance, flavor and uniqueness.

Ingredients

  • 1/2 cup oil
  • 3/4 to 1 cup whole wheat flour
  • 1/3 cup all purpose flour
  • 1 cup cornmeal
  • 1 3/4 cups milk
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Mix all ingredients.
  2. Pour into a greased 9 x 13 inch pan and bake for 20 minutes at 350 degrees F.
