Chocolate Fudge Muffins
These are yummy!
Ingredients
- 1 cup butter
- 4 squares bittersweet or semisweet chocolate
- 1 1/2 cups granulated sugar
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 eggs, beaten
- 1 teaspoon vanilla extract
Instructions
- Heat oven to 300 degrees F.
- In a saucepan over low heat, combine butter and chocolate or in a double boiler. Melt stirring frequently so the chocolate does not burn or stick.
- In a bowl combine sugar, flour and salt. Stir in chocolate mixture.
- Beat eggs then add them to the batter with the vanilla extract. Stir until eggs are well blended (do not beat the mixture).
- Line muffin tins with paper liners. Fill each one about 2/3 full.
- Bake for 30 to 40 minutes. Check to see if the muffins are done by inserting a wooden pick in one near the center of the muffin.
