Chocolate Mint Muffins
Yield: 12 muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- 1/4 cup butter, melted
- 28 creme de menthe thin candies, chopped, or 1 cup other chopped chocolate covered mint candies
Instructions
- Heat oven to 375 degrees F. Lightly grease 12 muffin cups or line with cupcake liners.
- Sift flour, sugar, cocoa powder, baking powder and salt into medium bowl; stir to mix.
- In another bowl, combine egg, milk and butter, beat to mix well. Pour egg mixture into flour mixture; mix until moistened. Be careful not to overmix. Gently fold in candies.
- Place about 1/4 cup batter into each prepared muffin cup.
- Bake for 15 to 18 minutes or until top of muffins are slightly firm. Remember toothpick won't necessarily work because of the melted chocolate.
- Cool in pan for 5 minutes.
- Place on wire rack to cool completely.
Notes
I couldn't wait. They were wonderful warm with a glass of milk.
