Cranberry Eggnog Muffins
Yield: 18 muffins
Ingredients
Muffins
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 2 eggs
- 3/4 cup eggnog
- 1/3 cup melted butter
- 1 teaspoon almond extract
- 1 cup chopped cranberries (combined with 2 tablespoons sugar)
Streusel Topping
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup butter
- 1/2 cup chopped pecans
Instructions
- Combine all muffin ingredients.
- Combine topping ingredients.
- Fill greased muffin cups two-thirds full and top with Streusel Topping.
- Bake in 400 degrees F oven for 20 to 25 minutes.
