Watermelon Rind Preserves Muffins
Ingredients
- 1 cup water
- 1 cup granulated sugar
- 1/2 cup butter
- 1 cup watermelon rind preserves
- 1 teaspoon cinnamon
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 egg
- 1 cup chopped pecans
- 1/2 cup raisins
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Heat oven to 325 degrees F.
- Combine water, sugar, butter, preserves and cinnamon in saucepan and let boil 5 minutes.
- Remove from heat and cool.
- Add remaining ingredients and bake in a small muffin pan for 25 to 30 minutes.
