Coffeecake Muffins

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons (1/2 stick) butter or margarine
1/2 cup granulated sugar
1 egg
3/4 cup milk
1/2 teaspoon vanilla extract

Heat oven to 400 degrees F.

Mix together dry ingredients. Make a well in the center.

Beat butter, sugar and egg together well. Mix in milk and vanilla extract. Pour into well. Stir just to moisten. Spoon part of batter into greased muffin tin 1/3 full. Sprinkle spice mix over top. Top with remaining batter. Filling 2/3 full. Bake for 20 to 25 minutes.

Spice Mix:
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon

Combine all ingredients, mixing well.

Makes 1 dozen muffins.
