Pina Colada Muffins
1 (18 ounce) box yellow cake mix
1 tablespoon coconut extract
1 tablespoon rum extract
1 cup flaked or shredded coconut
1/2 cup chopped walnuts
1 cup crushed pineapple
Prepare cake mix in mixer bowl following package directions. Add other ingredients.
Mix 1 minute; do not over-beat.
Grease muffin tins or line with paper cups. Fill about 2/3 full. Bake in preheated
350 degree F oven 15 to 20 minutes or until golden and muffin springs back when
touched.
Makes about 30 muffins.
