Irish Gingerbread
Ingredients
- 2 teaspoons butter
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1/2 cup soft butter
- 1 egg
- 1 cup molasses
- 1 cup hot water
- 2 cups all-purpose flour
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 cup granulated sugar
- 2 egg yolks
- 1/2 cup quick cooking oatmeal
Instructions
- Measure flour, baking soda, cinnamon, ginger and salt.
- Combine butter and sugar in a bowl and blend.
- Add egg and yolks. Beat until fluffy.
- Stir in molasses.
- Add dry ingredients, oatmeal and hot water, 1/4 at a time to egg mix.
- Pour into an 8 inch greased pan.
- Bake for 50 to 55 minutes at 350 degrees F.
