Quick Sweet Bread Recipes
Glazed Raspberry Loaf
3 cups flour
1 cup granulated
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) butter, cut up
2 eggs
1/2 cup raspberry jam
3/4 cup milk
Glaze:
2 tablespoons butter
2 tablespoons granulated sugar
2 tablespoons raspberry jam
Heat oven to 350 degrees F.
Combine flour, sugar, baking powder, and salt in mixing bowl. Mix well. Cut
butter into flour mixture until it resembles coarse salt.
Beat eggs in separate bowl; add jam and milk. Whisk until smooth. Stir jam mixture
into flour mixture until no flour streaks show; batter will be lumpy. Pour into
greased loaf pan; bake for 1 hour and 15 minutes or until an inserted wooden
pick comes out clean. Let loaf cool before glazing.
Make glaze. Drizzle over cooled loaf.
