Applesauce Coffeecake

Yield: 8 servings

Ingredients

  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1 (18.25 ounce) box yellow cake mix*
  • 1 2/3 cups applesauce
  • 3 eggs

Instructions

  1. Heat oven to 325 degrees F. Grease and flour Bundt pan.
  2. Combine sugar and cinnamon. Sprinkle 1 tablespoon over bottom of greased pan. Set remaining mixture aside.
  3. In large bowl, blend cake mix, applesauce and eggs until moistened. Beat for 2 minutes at high speed. Reserve 2 cups of batter. Pour remainder of batter in pan.
  4. Sprinkle reserved sugar and cinnamon over this.
  5. Top with reserved batter.
  6. Bake for 35 to 50 minutes or until a wooden pick inserted in center comes out clean.
  7. Cool for 45 minutes.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
