Egg Muffins

Ingredients

  • Eggs or Egg Beaters
  • Vegetables/Mix-ins of your choice (mushrooms, bell pepper, broccoli, onions, etc.)

Instructions

  1. Pour beaten eggs or Egg Beaters into a greased muffin pan; fill halfway. Add toppings directly into eggs.
  2. Bake at 375 degrees F for 30 minutes.
  3. Place cooled muffins into plastic bags and refrigerate.
  4. To warm them up, place one or two in the microwave for about 30 seconds.

Notes

These can also be eaten cold.
