Mom's Puffy French Toast
Ingredients
- 3 eggs
- 1 cup all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons granulated sugar
- 1 teaspoon light brown sugar
- 1/2 cup buttermilk
- 2 tablespoons butter, melted
- White bread, dried overnight
- 1/2 cup shortening
- Warm maple syrup
Instructions
- Break eggs into a large bowl. Beat eggs, with an electric mixer, on high for 2 minutes or until they are light and fluffy.
- Sift in flour (mixed with baking powder), salt, granulated sugar and brown sugar. Beat until smooth.
- Add buttermilk and butter. Beat until just combined. Don't over-beat.
- Slowly heat shortening in a heavy skillet.
- Dip bread into the batter to coat. Let bread sit in the batter for about 1 minute on each side.
- Sauté battered bread for about 3 minutes on each side or until it's golden brown and puffy.
- Serve with warm maple syrup.
