Oatmeal and Egg White Pancakes
They say once you try these, you will never go back (I'm not so sure about that). Tastes like French toast!
Yield: about 10 pancakes
Ingredients
- 6 egg whites
- 1 cup dry rolled oats
- 1 cup cottage cheese
- 2 teaspoons granulated sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- In a blender, blend all ingredients until smooth.
- Heat a griddle or large nonstick skillet over medium-low heat. Spray with nonstick cooking spray.
- For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed.
