Buttermilk Waffles

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 egg yolks
  • 1 1/4 cups buttermilk
  • 1/2 cup vegetable oil
  • 2 egg whites, beaten stiff

Instructions

  1. Stir dry ingredients together.
  2. Whisk egg yolks, buttermilk and vegetable oil in a large bowl.
  3. Add dry ingredients to the wet ingredients
  4. Fold egg whites in gently and thoroughly.
  5. Heat a waffle iron and butter lightly or spray with nonstick spray (even nonstick waffle irons require this step). Ladle batter onto iron (about 1/4 cup for an 8-inch round iron), close, and cook just until light golden brown.
  6. Serve immediately.
