Classic Chiffon Cheesecake
Ingredients
- 1/4 cup butter
- 1 cup Graham cracker crumbs
- 1/4 cup granulated sugar
- 2 (8 ounce) packages cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 3 eggs, separated
- 1/4 cup lemon juice
- 1/4 teaspoon salt
Instructions
- Heat oven 375 degrees F.
- In pan, melt butter, then stir in crumbs and sugar. Pat into the bottom of a 9 inch springform pan.
- Bake for 7 minutes, then cool.
- Reduce oven temperature to 300 degrees F.
- Beat cream cheese until fluffy.
- Add sweetened condensed milk and egg yolks. Beat until smooth.
- Stir in lemon juice. Set mixture aside.
- Beat egg whites and salt until stiff.
- Fold cream cheese mixture with egg whites. Pour into springform pan over crumb mixture.
- Bake for 50 to 55 minutes.
