Sweet Cheesecake Recipes

Classic Chiffon Cheesecake

1/4 cup butter
1 cup graham cracker crumbs
1/4 cup granulated sugar
2 (8 ounce) packages cream cheese, softened
1 can sweetened condensed milk
3 eggs, separated
1/4 cup lemon juice
1/4 teaspoon salt

Heat oven 375 degrees F.

In pan, melt butter, then stir in crumbs and sugar. Pat into the bottom of a 9-inch springform pan. Bake 7 minutes, then cool.

Reduce oven temperature to 300 degrees F.

Beat cream cheese until fluffy. Add sweetened condensed milk and egg yolks. Beat until smooth. Stir in lemon juice. Set mixture aside.

Beat egg whites and salt until stiff. Fold cream cheese mixture with egg whites. Pour into springform pan over crumb mixture. Bake 50-55 minutes.
