Butterscotch Coffee Cake

Ingredients

Brown Sugar Mix

  • 1 cup firmly packed brown sugar
  • 2 tablespoons butter
  • 1 cup chopped nuts

Cake

  • 1 (18.25 ounce) box yellow cake mix (no pudding added)*
  • 1 box instant butterscotch pudding mix
  • 1 box instant vanilla pudding mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 cup water

Instructions

Brown Sugar Mix

  1. Mix ingredients well.

Cake

  1. Heat oven to 350 degrees F.
  2. Beat cake ingredients for about 5 minutes.
  3. Pour 1/2 of cake mix into a greased 13 x 9-inch pan.
  4. Sprinkle half of brown sugar mix over batter.
  5. Add remaining cake mix and sprinkle remaining brown sugar mix on top.
  6. Bake for 35 minutes.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
