Cola Zucchini Cake

Ingredients

• 1 (18.25 ounce) box devil's food cake mix*
• 1/2 cup cola beverage
• 3 large eggs
• 1/3 cup vegetable oil
• 1 1/2 cups grated zucchini, with peel
• 1 cup semisweet chocolate chips

Instructions

1. Heat oven to 350 degrees F. Grease a 13 x 9-inch baking pan.
2. Empty cake mix into large bowl.
3. Add cola, eggs and cooking oil. Beat on low until just moistened.
4. Beat on medium for 2 minutes.
5. Add zucchini. Stir.
6. Turn into prepared pan. Sprinkle with chocolate chips.
7. Bake for 35 to 40 minutes until wooden pick inserted in center comes out clean.
8. Let cool.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
