Bayou Brownies

Ingredients

Bottom Layer

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 cup pecans
  • 1 stick (1/2 cup) butter, melted
  • 1 egg, beaten

Top Layer

  • 8 ounces cream cheese
  • 1 (16 ounce) box confectioners' sugar
  • 2 eggs, beaten until fluffy

Instructions

  1. Heat oven to 325 degrees F.
  2. Mix the bottom layer ingredients together by hand. Press into a greased 9 x 13 inch pan.
  3. Mix the top layer ingredients with an electric mixer and pour over the first layer.
  4. Bake for 40 to 50 minutes.
  5. Cool and cut into squares.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
