Recipes Made with Cake Mixes
Mint Munchers
Yield: about 5 dozen
Ingredients
Cookies
- 2 (18.25 ounce) boxes devils food cake mix
- 1 cup butter
- 4 eggs
Filling
- 2 1/2 cups confectioners' sugar
- 1/4 cup butter, softened
- 3 tablespoons milk
- 1 tablespoon peppermint extract
- 3 drops green food coloring (optional)
- Dash of salt
Instructions
- In a mixing bowl combine cake mixes, butter and eggs. Mix well. Place rounded spoonsful on ungreased baking sheets. Do not flatten.
- Bake at 350 degrees F for 8-10 minutes or until set.
- Cool for 5 minutes before removing to wire racks. (Cookies will flatten as they cool).
- In a small mixing bowl, beat filling ingredients until smooth. Spread on bottom half of cookies.
- Top with remaining cookies.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
