Cantaloupe Cheesecake Squares

A to-die-for dessert for cheesecake fanatics everywhere.

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*, divided
  • 16 ounces cream cheese, softened
  • 1 cup pureed cantaloupe
  • 1 teaspoon vanilla extract
  • 4 eggs, divided
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1/3 cup granulated sugar

Instructions

  1. Heat oven to 300 degrees F. Grease a 9 x 13 inch pan.
  2. Set aside 1 cup dry cake mix.
  3. Combine remaining cake mix, 1 egg and oil to a crumbly consistency. Press into bottom and sides of prepared pan.
  4. Beat cream cheese, sugar and salt.
  5. Add 3 eggs and reserved cake mix. Beat 1 minute at medium speed.
  6. At low speed gradually add cantaloupe, milk, lemon juice and vanilla extract. Beat until smooth.
  7. Pour into crust.
  8. Bake for 45 to 55 minutes until center is firm.
  9. Cool to room temperature.
  10. Cover and chill for at least 1 hour.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
