Easy Peach Dessert

Yield: 12 servings

Ingredients

  • 3 1/2 cups sliced peaches (sprinkle with a little sugar to bring out some juice) or use 1 (29 ounce) can sliced peaches
  • 1 (18.25 ounce) box butter pecan cake mix* (or French vanilla)
  • 3/4 cup melted butter
  • 1/2 cup chopped pecans or walnuts
  • Flaked coconut
  • 8 ounces whipped cream

Instructions

  1. Heat oven to 350 degrees F.
  2. Cut the peaches into chunks. Pour peaches and juice into 9 x 13 inch baking pan.
  3. Sprinkle the cake mix over the peaches.
  4. Drizzle with the butter.
  5. Sprinkle on the nuts.
  6. Sprinkle on the coconut.
  7. Bake for 35 minutes.
  8. Serve warm or cold. Top with whipped cream.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
