Orange Blossoms
Ingredients
Muffins
- 1 (18 1/2 ounce) box white cake mix*
- 1 cup water
- 2 eggs
Glaze
- 1 box confectioners' sugar
- 1 grated lemon rind
- 1 grated orange rind
- Juice of 2 lemons
- Juice of 2 oranges
- Touch of orange food coloring, if desired
Instructions
- Blend Muffin ingredients in a mixer for 4 minutes.
- Grease and flour* mini muffin tins.
- Fill 1/2 full and bake at 325 degrees F for 5 to 7 minutes.
- Remove from tins. Let cool.
- Blend Glaze ingredients together. Dip each cake into glaze, and drain on wire rack.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
