Ingredients

Muffins

  • 1 (18 1/2 ounce) box white cake mix*
  • 1 cup water
  • 2 eggs

Glaze

  • 1 box confectioners' sugar
  • 1 grated lemon rind
  • 1 grated orange rind
  • Juice of 2 lemons
  • Juice of 2 oranges
  • Touch of orange food coloring, if desired

Instructions

  1. Blend Muffin ingredients in a mixer for 4 minutes.
  2. Grease and flour* mini muffin tins.
  3. Fill 1/2 full and bake at 325 degrees F for 5 to 7 minutes.
  4. Remove from tins. Let cool.
  5. Blend Glaze ingredients together. Dip each cake into glaze, and drain on wire rack.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

These cupcakes can be frozen.
