Pastel Cupcakes
Ingredients
Cupcakes
- 1 (18.25 ounce) box white cake mix or cake mix with pudding in the mix*
- 1/4 cup Kool-Aid Sugar-Sweetened Soft Drink Mix, any flavor
Colorful Frosting
- 4 1/2 cups confectioners' sugar
- 1/2 cup butter, softened
- 2 tablespoons milk
- 2 tablespoons Kool-Aid Sugar-Sweetened Soft Drink Mix, any flavor
Instructions
Cupcakes
- Prepare and bake cake mix as directed for cupcakes, adding soft drink mix before beating.
- Frost cooled cupcakes.
Colorful Frosting
- Beat sugar, butter, milk and soft drink mix in large bowl with electric mixer on low speed until well blended and smooth.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
