Cake Roll and Jellyroll Recipes
Jelly Roll
3 eggs
1 cup granulated sugar
3 tablespoons cold water
1 cup flour
1 teaspoon baking powder
1/3 teaspoon salt
Beat eggs and sugar until thick. Add water, then flour, baking powder and salt,
sifted together. Line cookie sheet with wax paper and rub with oil, then flour.
Pour in batter. Bake at 425 degrees F for 12 to 15 minutes. Turn onto cloth
on which you have sifted confectioners' sugar. Trim edges and spread with jelly
or lemon sauce and roll in cloth.
Lemon Sauce:
Grated rind and juice of 1 lemon
1 cup granulated sugar
3 tablespoons flour
2 tablespoons butter
Salt
1 egg
1 cup hot water
Cook ingredients until thick. Cool. This is enough for two jelly rolls. Will
keep in refrigerator.
