Crater Cake with Cola Frosting

This cola cake contains tiny marshmallows that rise to the top and melt while
cake bakes leaving crusty little craters. May be iced if desired or eaten as
is.
2 cups all-purpose flour
2 cups granulated sugar
1 cup butter or margarine
3 tablespoons cocoa
1 cup cola carbonated beverage
1/2 cup buttermilk
2 eggs, beaten
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups miniature marshmallows
Heat oven to 350 degrees F.
Measure flour and sugar into mixing bowl. Stir. Put butter, cocoa and cola into
saucepan over medium heat. Stir and bring to a boil. Pour over flour-sugar mixture.
Mix well. Add buttermilk, beaten eggs, baking soda, vanilla extract and salt.
Stir to combine.
Mix in marshmallows. Spread in greased 9 x 13-inch pan. Bake in oven for about
35 to 40 minutes until an inserted wooden pick comes out clean. Cool and ice
with Cola Frosting.
Cola Frosting:
1/4 cup butter or margarine
3 tablespoons cocoa
1/3 cup cola carbonated beverage
2 cups confectioners' sugar
1/2 cup chopped pecans or walnuts
1 teaspoon vanilla extract
Combine butter, cocoa and cola in medium saucepan. Heat over medium heat to
the boiling point. Remove from heat.
Stir in icing sugar, pecans and vanilla extract. Add more cola or icing sugar
as needed to make a not too thick icing. Pour over warm cake.
Makes about 1 1/2 cups.
