Tomato-Candied Ginger Jam
1 (28 ounce) can tomatoes
1 1/4 cups granulated sugar
1/2 lemon, quartered and sliced thin
1/3 cup chopped candied ginger
Combine ingredients and cook over low heat until thick - about 2 to 3 hours.
Stir occasionally to prevent sticking. Pour into sterilized jar and seal.
Makes 1 pint.
