Pineapple-Cheese Casserole

Pineapple-Cheese Casserole is a sublime dish to set on the table at Easter, Thanksgiving and Christmas. It's guaranteed that there will be no leftovers! It's also a very welcome dish at potlucks.

Pineapple Cheese Casserole

Ingredients

  • 1 (20 ounce) can crushed pineapple (drained, saving 4 tablespoons juice)
  • 1 cup sharp Cheddar cheese, grated
  • 3/4 cup granulated sugar
  • 4 tablespoons all-purpose flour
  • 4 tablespoons pineapple juice
  • 1/4 cup butter, melted
  • 1 cup crumbled Ritz crackers

Instructions

  1. Combine all ingredients except butter and crumbs.
  2. Pour into a greased 8 inch casserole dish.
  3. Melt butter and mix with cracker crumbs. Spread over top.
  4. Bake at 350 degrees F for 20 to 30 minutes.

Notes

This recipe can easily be doubled using a larger casserole dish. Pineapple chunks can be substituted for the crushed pineapple, if desired, but we prefer crushed pineapple.
