Artichoke Casserole

Ingredients

  • 1 clove garlic, minced
  • 1/4 cup chopped scallions
  • 2 tablespoons parsley
  • 1/4 cup olive oil
  • 1 rounded tablespoon all-purpose flour
  • 3/4 cup milk
  • 1 (13 3/4 ounce) can artichoke hearts, cut up
  • 1/2 cup shredded sharp Cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Sauté garlic, onions and parsley in oil.
  2. Add flour and gradually stir in milk.
  3. Fold in artichoke hearts.
  4. Place in a 2 quart casserole and cover with cheeses.
  5. Bake at 325 degrees F for 15 minutes.
