Black Bean Casserole Ole
Yield: 6 servings
Ingredients
- 1 cup chopped onions
- 3/4 cup yellow cornmeal
- 2 teaspoons chili powder
- 1 cup evaporated skim milk
- 1/4 cup water
- 1 (16 ounce) can whole kernel corn, drained
- 1 (16 ounce) can black beans, drained and rinsed
- 1 (16 ounce) can stewed tomatoes
- 1 (4 ounce) can diced mild green chiles
Instructions
- Heat oven to 350 degrees F. Lightly spray an 8 inch square baking pan with nonstick spray.
- In a large bowl, combine all ingredients. Mix well. Place in prepared pan.
- Bake uncovered for 45 minutes.
