Butterscotch Sweet Potato Casserole

Ingredients

  • 3 sweet potatoes
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1/2 stick (1/4 cup) butter
  • 1/2 cup milk
  • 1 (3 ounce) box instant butterscotch pudding

Instructions

  1. Boil, drain and mash sweet potatoes.
  2. In a large bowl, mix all ingredients well. Place in buttered casserole dish.
  3. Bake at 325 degrees F until nearly firm in center.

Notes

You can also bake this in an unbaked 9 inch pie shell.
