Bud Lake Cafe Baked Pork Chops Southern Style

Ingredients

• 6 extra thick center cut pork chops
• 2 tablespoons shortening
• 1/2 cup uncooked rice
• 1 (28 ounce) can tomatoes
• Salt and pepper to taste

Instructions

1. Heat oven to 300 degrees F.
2. Brown pork chops on both sides in shortening.
3. Place pork chops in a baking dish and cover with onion slices.
4. Sprinkle rice over dish and season well with salt and pepper.
5. Cover with tomatoes and bake for two hours.
