Fetch's Famous Roasted Half Lemon Chicken
Ingredients
- 2 cups lemon juice
- 1/2 cup honey
- 2 tablespoons garlic, minced
- 1 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoons oregano
- 1 chicken
- Salt and pepper to taste
Instructions
- Heat oven to 400 degrees F.
- Combine lemon juice, honey and garlic, mix thoroughly.
- Combine olive oil and vinegar. Add oil and vinegar to lemon juice mixture, whisking rapidly.
- Add oregano, salt and pepper.
- Season chicken with salt and pepper.
- Coat chicken with lemon dressing and roast for one hour.
