Fleming's Prime Steakhouse Velvet Chocolate Cake
Ingredients
Cake
- 1 pound butter
- 1 cup granulated sugar
- 6 ounces coffee
- 2 ounces Frangelico or other liquor
- 1 pound semisweet chocolate
- 8 eggs
- 1 teaspoon vanilla extract
Ganache
- 6 1/2 ounces semisweet chocolate
- 5 1/2 ounces heavy cream
Cherry Sauce
- 1 cup sweet dried cherries
- 2 cups red wine
- 1 teaspoon powdered sugar
Instructions
Cake
- Melt chocolate and butter in a double boiler.
- Combine sugar, coffee, vanilla extract and liqueur in a large bowl.
- Add melted chocolate and butter to coffee mixture.
- Whisk eggs until well mixed and add to chocolate mixture. Mix well.
- Pour into a buttered and plastic wrap-lined 9 inch cake pan.
- Bake in a water bath in a 300 degrees F oven for 1 hour.
- Remove from oven and chill for at least 2 hours before unmolding.
- Place cake upside down on a wire rack and cover with ganache.
- Chill for 30 minutes then top with Cherry Sauce before slicing.
Ganache
- Mix together in a double boiler until chocolate is completely melted.
Cherry Sauce
- Mix wine with sugar and reduce by half in a saucepan over medium heat.
- Add cherries and blend together.
