Coconut Spinach
Ingredients
Coconut Spinach
- 1 pound frozen spinach
- 2 tablespoons coconut oil
- 1/4 cup onion, chopped
- 1/4 teaspoon salt
Optional
- 1 teaspoon ginger
- 1/2 teaspoon ground cumin
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon cayenne pepper
- 1/2 cup cashews
Instructions
- Melt coconut oil in skillet, and sauté onion until translucent or soft.
- Add spinach, salt and other seasonings, if desired. Stir and simmer for 5 to 10 minutes.
