Bar, Square and Slice Cookie Recipes

Pineapple Date Bars

1 (20 ounce) can crushed pineapple
2 cups chopped dates
3 cups oats
1 cup wheat germ
1 cup coconut
1 cup chopped walnuts
3/4 teaspoon salt
1 1/4 cups orange juice
1/4 cup oil

Combine pineapple and dates in a saucepan. Cook over medium heat until thickened, stirring frequently.

In a large bowl, mix oats, wheat germ, coconut, walnuts and salt. Stir in juice and oil. Press half of the oat mixture into a greased 9 x 13-inch pan. Spread the pineapple mixture on top, and
then sprinkle with the remaining oat mixture. Press down lightly.

Bake at 350 degrees F for 30 minutes or until lightly browned. Cool. Cut into squares.
