Gooey St. Louis Brownies

Ingredients

Brownie

  • 3/4 cup (1 1/2 sticks) butter
  • 6 ounces unsweetened chocolate
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, lightly beaten
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt

Gooey Topping

  • 2 large eggs
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Grease a 13 x 9 inch baking pan.

Brownie

  1. In a 3 quart saucepan, heat butter and chocolate over medium-low heat until melted, stirring frequently.
  2. Remove saucepan from heat; stir in sugar and vanilla extract.
  3. Add eggs; stir until well mixed.
  4. Stir in flour and salt just until blended.
  5. Spread batter in pan.

Gooey Topping

  1. In a medium bowl, with mixer at low speed, beat eggs, cream cheese, sugar and vanilla extract until well combined.
  2. Gently spread topping over brownie.
  3. Bake brownie for 55 to 60 minutes or until wooden pick inserted 2 inches from edge comes out almost clean and top turns golden brown.
  4. Cool in pan on wire rack, then cut into bars.
