Stuffed Butter Date Cookies

Ingredients

Cookies

  • 1 pound soft pitted dates
  • 48 walnut halves
  • 1 cup (2 sticks) butter
  • 3 cups packed brown sugar
  • 4 eggs
  • 2 cups sour cream
  • 2 teaspoons vanilla extract
  • 5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda

Butter Frosting

  • 1 stick butter
  • 2 cups confectioners' sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • Hot water

Instructions

Cookies

  1. Heat oven to 400 degrees F.
  2. Stuff each date with a walnut half. Press to hold shape.
  3. Cream butter and sugar. Beat in eggs, sour cream and vanilla extract. Stir in dry ingredients. Add stuffed dates, using a teaspoon to dip out batter-covered dates.
  4. Place on a cookie sheet, and bake for 8 to 10 minutes. Cool.
  5. Frost with Butter Frosting.

Butter Frosting

  1. Heat and brown the butter. Do not burn.
  2. Stir in confectioners' sugar mixed with flour.
  3. Add 1 teaspoon vanilla extract. Add hot water to spreading consistency.
