Apricot Cheese Wafers

Ingredients

  • 1/2 cup butter, softened
  • 3 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup dried apricots, finely chopped

Instructions

  1. With an electric mixer cream butter and cream cheese. Gradually add sugar and continue beating until fluffy. By hand, stir in the flour and apricots; mix until combined.
  2. Shape the dough into four or five logs about 1 inch in diameter. Wrap each log in wax paper. Chill for three or more hours.
  3. Heat oven to 350 degrees F.
  4. Cut dough into 1/4 inch slices. Place an inch apart on an ungreased cookie sheet.
  5. Bake for 8 to 10 minutes.
  6. Cool on a wire rack.
