Mystery Macaroons

Ingredients

• 1 (5 1/2 to 6 1/4 ounce) package buttermilk biscuit mix
• 1 (2 3/4 ounce) package instant potatoes
• 1 cup granulated sugar
• 1 egg
• 1/2 cup (1 stick) butter, melted
• 1 teaspoon coconut extract

Instructions

1. Heat oven to 350 degrees F.
2. Mix dry ingredients and set aside.
3. Beat egg and slowly add melted butter and coconut extract.
4. Combine dry ingredients and egg mixture. Roll into small balls, place on ungreased cookie sheets, and press each ball with a fork.
5. Bake for 10 to 15 minutes
6. Let cool for a few minutes before removing from pan.
