Chocolate Fudge Meringues

Yield: 24 cookies

Ingredients

  • 3 egg whites
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 cups confectioners' sugar
  • 1/2 cup unsweetened cocoa
  • 1 ounce semisweet chocolate, finely chopped

Instructions

  1. Heat oven to 300 degrees F. Line cookie sheets with parchment or aluminum foil.
  2. In a medium size bowl, beat egg whites until foamy.
  3. Add cream of tartar and salt; beat to soft peaks.
  4. Beat in sugar gradually, beating until mixture forms stiff, shiny peaks.
  5. Fold in cocoa; fold in chopped chocolate.
  6. Drop mixture by tablespoons onto prepared cookie sheets.
  7. Bake until cookies feel crisp when touched, 20 to 25 minutes.
  8. Cool in pans on wire racks.
