Avalanche No Bake Cookies

Ingredients

  • 2 cups Rice Krispies cereal
  • 1 1/2 cups mini marshmallows
  • 1 pound white chocolate (I prefer Ghirardelli)
  • 1/3 cup peanut butter
  • 1/4 cup mini chocolate chips

Instructions

  1. Line a cookie sheet with parchment paper or spray with nonstick cooking spray.
  2. Mix Rice Krispies and marshmallows in a large bowl.
  3. Put the white chocolate into a medium size bowl and heat in the microwave for 1 minute. Mix and heat in 15 to 30 second increments until completely melted.
  4. Add peanut butter to the melted chocolate and mix until smooth.
  5. Pour the chocolate peanut butter mixture over the cereal and marshmallows. Mix until well coated.
  6. Scoop about 2 tablespoons of cereal mixture and place it on the cookie sheet. Sprinkle some mini chocolate chips on each cookie.
  7. Refrigerate for 1 hour or until chocolate is set.
  8. Store in an airtight container or zip top bag in the refrigerator.
