Minestrone
Yield: 1 quart; 2 servings
Ingredients
- 2 cups chicken broth
- 1 small zucchini, sliced
- 1 cup frozen mixed vegetables
- 1 tomato, peeled and chopped
- 2 tablespoons chopped onion
- 1 clove garlic, chopped
- 1/3 cup uncooked macaroni
- 1 (8 3/4 ounce) can kidney beans, drained
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- Parmesan cheese, grated
Instructions
- Bring broth to a boil in a saucepan.
- Add remaining ingredients except cheese. Reduce heat and simmer for 15 minutes.
- Sprinkle with cheese and serve.
