Tortellini Soup
Yield: 7 (1 cup) servings
Ingredients
- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 cups (14 1/2 ounces) low-sodium chicken broth
- 8 ounces cheese tortellini
- 1 (14 1/2 ounce) can no-salt added Italian stewed tomatoes
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
Instructions
- In a large saucepan coated with nonstick cooking spray, sauté onion and garlic until tender.
- Add broth; bring to a boil. Add the tortellini; reduce heat. Simmer for 10 minutes or until tortellini are tender.
- Stir in tomatoes and spinach; heat through.
