Clams Italiano
2 dozen littleneck clams
1/4 cup dry white wine
1 cup bottled marinara sauce
2 tablespoons chopped cilantro
2 tablespoons chopped scallions
Scrub clams well under cold running water. Place in microwave-safe dish with
wine. Microwave on HIGH for 3 to 5 minutes until shells open. Discard any unopened
clams.
Meanwhile, combine marinara, parsley and scallions. Spoon over clams. Microwave on MEDIUM-HIGH for 2 minutes.
Yields 2 servings.
