Melon with Minted Lime Dip

Yield: 8 cups fruit (1 cup dip)

Ingredients

Melon

  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 6 tablespoons lime juice
  • 2 tablespoons minced fresh mint
  • 2 teaspoons grated lime peel
  • 1 1/2 teaspoons ground ginger or 2 tablespoons grated fresh gingerroot
  • 8 cups melon balls or cubes

Minted Lime Dip

  • 1 cup (8 ounces) sour cream
  • 2 tablespoons sugar
  • 1 tablespoon lime juice
  • 2 teaspoons grated lime peel

Instructions

  1. In a bowl, combine the sugar, water, lime juice, mint, lime peel and ginger.
  2. Add melon balls.
  3. Cover and refrigerate for 1 to -6 hours.
  4. Thread melon onto wooden skewers or toothpicks.
  5. In a bowl, combine dip ingredients.
  6. Serve with melon.
