Melon with Minted Lime Dip
Yield: 8 cups fruit (1 cup dip)
Ingredients
Melon
- 1/4 cup granulated sugar
- 1/4 cup water
- 6 tablespoons lime juice
- 2 tablespoons minced fresh mint
- 2 teaspoons grated lime peel
- 1 1/2 teaspoons ground ginger or 2 tablespoons grated fresh gingerroot
- 8 cups melon balls or cubes
Minted Lime Dip
- 1 cup (8 ounces) sour cream
- 2 tablespoons sugar
- 1 tablespoon lime juice
- 2 teaspoons grated lime peel
Instructions
- In a bowl, combine the sugar, water, lime juice, mint, lime peel and ginger.
- Add melon balls.
- Cover and refrigerate for 1 to -6 hours.
- Thread melon onto wooden skewers or toothpicks.
- In a bowl, combine dip ingredients.
- Serve with melon.
